Salmon burgers…….

I didn’t sleep at all last night. Seriously, I didn’t. I have no idea how I was able to make it through work. I was numb in the mind and emotions (until the end of the day when I lost it) I am happy that even though I didn’t sleep I still got up and worked out with a friend. I promised I would and I showed up and that is what matters. I will tell you that I have no idea how in the heck I am still awake right now.!! I should be passed out, I feel very wide awake still. This is how it started last night. Ugh. Hope it is not another toss and turning with my brain not shutting off night..

Anyway here is how the food played out today. I have excuses but I am not going to use them. Here it is:

 

Breakfast was coffee with creamer, one cup. Super foods shake Cafe Latte flavor with spinach, almond butter and blueberries.

Get to work and have two cups of coffee with creamer and three Christmas cookies that a co-worker brought in today. Ugh. Tis’ the season.

Lunch was 1/2 cup of tuna salad with the cauliflower puree and celery. One slice of FFC bread. One cup of kale salad with parmesan cheese and croutons. Also had diluted lemon  dressing. I wanted more food so I bought a bag of Tostitos corn tortilla chips (two servings in one bag) and a cup of Tostitos nacho cheese cup.

Dinner was TWO Angry Orchard Knotty Pear Hard Cider. One cup of frozen green beans, one tablespoonful of garlic aioli and the salmon burger pictured above. The salmon burger has carrot puree in it too.  I was determined to FINALLY make this recipe forgetting that it called for putting the patties in the fridge for one hour first. Yikes! Who has time for that? So I popped them in the freezer and took a shower (I feel better after that) while they set. Hubby and I really enjoyed these! He had his on a bun. I saved one for me to have for lunch tomorrow. I will be making these again and again! So good.

I am only at about 125 ounces of water today. I did do my Yoga Flow on the Go workout this morning and that makes five days in a row. I am excited that I am developing consistency.

Hurt myself during yoga…..

I think I am the only person I know who has injured themselves during a yoga practice. Once I fell out of a pose and injured my shoulder. Another time I fell out of a pose and injured my hip so bad I couldn’t teach Zumba for a month. Today I think I must have done one of the poses incorrectly and now pulled something in my lower back. It keeps locking up in a painful way..bleh.

Any way this is how my food played out.

Breakfast was coffee with almond milk creamer, two cups. Cafe Latte super foods shake with dark cherries and spinach.

Went to work and brewed a cup of coffee with half and half. Then I needed something stronger so I went to the vending machine and got a bottled Starbucks Mocha frap. I was feeling cold so I brewed a cup of decaf with more half and half.

Lunchtime I had shredded chicken with a Greek vinaigrette and cabbage, broccoli salad with green olives. Half of an apple, pita crackers and humus. It was all very good!

Had an incredibly stupid stress fun day at work. Guess I should call it a day at grade school instead! I don’t understand when it happened but at some point people stopped understanding how to listen and follow directions OR when they are “grown ups” but are acting like they are thirteen and have no common sense of what a work environment should be. Okay I will stop… I was just giving you a back story to explain my dinner.

My dinner was two Angry Orcahrd Easy apples and 3 mini bell peppers.

Yep. That is my “fitness coach” nutrition at it’s best.

I am proud to say that I did at least accomplish “dinner and done”

Productive day today…

I feel like I had a productive day today. I did not work out and didn’t get any studying done for my certification but it was productive none the less. I did meal prep today.

Today I finally made the apple banana muffins for my hubby’s lunch. They are made with almond flour so very low carb and it counts as a serving of fruit and he doesn’t even know! Okay well he will now. (: I also made raspberry jam (no sugar) it is more like a runny jam but I am excited to try it. I made homemade almond milk. I am going to share the super simple recipe tomorrow on my Fitness page so stay tuned. Roasted zucchini, broccoli and a spaghetti squash. Made homemade healthy spaghetti sauce too.  I like days that I feel like I got something healthy for me done. I had good intentions to film some videos for my Cancercize page but I didn’t. Instead I took a nap and watched a movie with my hubby. All wonderful Sunday things.

Water was good today: 150 ounces total. Here is how the food for the day played out:

Breakfast was my vegan chocolate superfoods shake with spinach and blueberries. Two coffee’s with creamer and one espresso with a combination of creamer and half and half.

Lunch was more of the awesome cajun smoked salmon dip with generic Ritz crackers. Had twelve of them. Then I had steak stir fry with carrots, bell pepper, broccoli and carrots all in a teriyaki sauce.  Had half of an apple left over from the muffins.

Had to taste one of the apple banana muffins to make sure I didn’t accidentally poison the hubby.

Dinner tonight was PIZZA!! Yeah after all that food prep I was too tired to actually cook!! So I ordered pizza and salad. Had my usual, sausage and black olive and a garden salad with balsamic dressing.

Outside of no workout and not getting all my things done of my TO DO list I feel pretty darn good about myself and rested.

Oh!! And I plugged in my weight into my tracker app and I am officially 12.8 pounds lighter! I have been using my tracker since Sept 2017 and I am down. I know twelve pounds may not seem like much to you in a years time but to me it feels like one hundred pounds!! It was the boot of confidence I needed to press on and fight the good fight.

Muffins and banana bread…oh my!

Tis the season!! The snacks are already starting to show up in the office. Today it was homemade banana bread with fake butter, then it was mini blueberry muffins that were divine! So soft and light. So lovely I ate three of them! Eek! I emailed my hubby today to tell him we were very busy and it was going to be a very long day and in unrelated news I had consumed three muffins. TOTALLY UNRELATED! *not

This is how my food played out today:

Breakfast: coffee 3 cups today with creamer. Super foods shake vanilla with blueberries and spinach.

Work: Two more cups of coffee with creamer. Banana bread with butter. mini blueberry muffin

Lunch: The other half of my Cubano sandwich from yesterday. kale salad with pumpkin seeds and poppy seed dressing. Two more blueberry muffins

Dinner: one Italian sausage, one bell pepper 1/2 cup marinara sauce

Two pieces of the Halloween candy I bought and stashed. (I sense danger) It was two pieces of sour punch candy. It is equal to one piece of licorice.

Anyway that is how my day played out. Did 150 ounces of watering yoga workout today too!

Buffalo burgers…oh my!

A very relaxed Sunday and nothing on my to do list really got done so what do I do? I just shut down and do even less. I don’t know why I do this to myself but I do. Which is also why I will then turn around and sabotage myself with food too.

This is how today played out:

Breakfast: coffee with almond milk (2) espresso with almond milk. Blueberry donut.

Stopped up on the South Hill to pick up some cool mittens a friend made for me, so we were so close to Target again we stopped in for another coffee. Venti caffè mocha. Grabbed the bacon egg bites for some protein.

Lunch: We went to Cabellas to shop for some winter clothes for the hubby. Stopped in there for lunch. I ordered the buffalo burger no cheese and a side salad. Choose the balsamic vinaigrette and had half of that on the salad.  Had water to drink. Not bad. I kept the top off the burger and ate all of hubby’s veggies from his burger too. I did all right until I tried one of his super salty twice fried fries dipped in ketchup!! Caught myself eating about five more after that. What is it about salt??

For my dinner I had the rest of my dinner from yesterday. That meant the salad with black olives and cucumbers and onions with, you guessed it balsamic vinaigrette! Also the rest of the sausage and peppers in marinara. It was even better the second day!

 

No workout today. Water intake was 145 ounces.

Today was better on the scale..

Woke up this morning and was feeling good! Had my water first then hoped on the scale…numbers are down YAY!! This is what sucks about it though…. everyone is right. Eat right, feel better.  Bleh! Ha ha ..honestly though I do have more energy when I eat better. The scale likes it too.

Had a harder time convincing myself that I wasn’t hungry today so I consumed more water to try and fend it off. I did have a few more carbs today than yesterday. Here is how my day of food played out:

Morning: coffee with vanilla almond milk. Two cups

Breakfast: Superfoods vanilla with spinach and blueberries.

Work: two more cups of coffee with half and half.

Lunch: Spinach salad with tiny tomatoes, olive oil and red wine vinegar. Half an apple. Deli sliced ham and one serving of Triscuit Wasabi and Soy Sauce flavored ( enter the extra carbs I mentioned)

Snack: Humus and Carrot Sticks

Dinner: garlic encrusted tilapia, steamed zucchini and sweet potato tots. (rest of the carbs)

Tomorrow I start my 3 Day Reboot. That means very limited caloric intake and no sugars. I do this several times a year. I refuse to give up my coffee (and almond milk) but all in all it is pretty easy to do. I need this to help get me back on track. Especially since I am traveling this weekend and seeing the doctor on Monday….#bleh

Anyway: Water goal was 75 ounces I hit 100 at work alone. Workout today was Yoga.

Goal tomorrow: Yoga, stick to Reboot plan, lots of water.

The bacon cheeseburger wins again….

…..My day started off with a cup of coffee with milk (I am out of almond milk and that makes me sad) make that two cups of coffee with milk. Did my Flow on the Go Yoga workout then had a cup of espresso with get this, the mocha almond milk cold brew…..so that is a ‘double’ in my opinion.  Made my healthy superfoods shake. Today was chocolate, spinach and frozen mixed berries. Same-o same-o..

Got to work had two cups of coffee with half and half. Helped myself to my LAST Little Debbie Swiss roll for a morning snack. Lunchtime rolls around and I have the beef patty with hot sauce on it. IT WAS HOT!!! It was the left over from the taco Wednesday. They make their salsa hot!! Glad I had the carrot and celery sticks to cool my mouth off. Had  some gouda cheese too. A little later on during the work day I broke down and got a coke. Grosses me out now that I am writing about it.

With the dawn of a new age and all the wonderful things we can do online I ordered my dinner online today and had it delivered. Thank you GrubHub…I think!! #notreally

We ordered from the local burger chain called Zips. I got the  pepper jack bacon cheeseburger with mozzarella sticks. THE BEST CHEESE STICKS EVER!!  And that is what my Friday looked like.  My poop may not be good tomorrow from all the cheese. So my body will punish me soon enough!!

Love is Julie.

I do not know where to start. I put off writing this one because I knew I would be too emotional while composing it. So here goes nothing….

This is my beautiful friend Julie. We met at my Zumba class. She had lived 3 days in Spokane and found my class. The moment she walked in the door and introduced herself I knew in my heart that we would be friends. Something about her just clicked with me. The next day she asked me to come to her house and have a glass of wine. Now I knew we would be great friends for life!

I will never be able to explain to you how much her friendship carried me through this fight.

So many times she was just there. She yelled at me when I wouldn’t call her when I was weak and feeling awful. She has chewed me out when she feels that I talk about how unattractive I am. She has walked (slowly) with me, fed me, visited. Taken me to her place just to have a change of view and different couch to sit on. I remember once after the big surgery she came over and hoped up next to me in my bed and massaged my swelling arm for me. We didn’t talk much because I was still so drugged, yet she stayed, petting my arm for me.

Nope. I can’t get through this without tearing up. There is no way I could have done this without her. As my husband put it he and Julie are my team. She has helped him out as much as me. I honestly think they planned the whole tag team thing.

Life is so funny. People come into your life for a reason and a season. There are friends for a moment. Friends for a season. Friends for a lifetime. Julie is a lifetime friend. I already told Keith that when she moves (her husband has a job that moves them a lot) that will be where our next vacation destination will be! When she is gone over the summer I miss her terribly. If we don’t text at least once a week I feel like something is missing. I can’t find any words now that will ever explain what her friendship means to me. I just know that I need her in my life. Always.

Love is: my neighbors…

Okay so they are my neighbors, that is how they prefer to be introduced. The reality is they are my landlords. And my life is so much better since I started paying them rent!

When I met them they reminded me so much of my former boss Jay and his wife Mary. Kind, thoughtful, smart, friendly and funny. It was like a little bit of home right here in my own apartment.

My neighbors Dan and Angie. They are kind an incredibly thoughtful. They make you feel like you have known them your whole life. We shared the news with them right away. Not that we had to, but because we wanted to. We wanted to let them know I would be home for weeks after surgery. We wanted them to know why our patterns were going to change.

They teared up, smiled and hugged us. Told me that I will beat this. They gave me a cushion to help me be able to sit up and get off the couch. Angie, a retired nurse, would check in on me when Keith went back to work. They have even shared their coffee with me.

There are two moments I want to highlight. One was when my mom came to stay and help out after the surgery, they rushed on trying to get the attic apartment that they had been renovating ready enough for my mom to have her own space to sleep. They put up a mattress and a chair for her. Some towels for the bathroom and a light for her to read by. So thoughtful and helpful for us too. The other was when my cousin Kris came with her RV. We asked for a good place for them to park it. Dan said he knew the best place. The back yard! He let them plug-in and stay in the back yard for a week. Dan and Angie played with the kids and brought their granddaughter over for playing too. They visited with Kris while Keith and I were at work.

Every year they go to AZ for winter. I find it funny because we moved here from AZ. They actually go back and visit where we used to live! My mom works at a tourist place and they always go there. When they went this last time they purposefully sought out my mom and then went to lunch with her. These are real people. These are real neighbors and I know that I was meant to live here at this time in my life.

Love is so very blessed…..

This is Kathy. We met through work……..yada yada yada.

Kathy is kind. There are no other words. She is just kindness personified. I did not tell Kathy about my cancer. We rarely saw each other but when we did we always laughed and smiled and hugged. The story really  starts with Anita and Linda.

Linda and I became friends at work years ago. We sat at the same lunch table. Linda took a job downtown but we would text each other occasionally. When I started teaching Zumba classes Linda came. She came to ALL my classes. Anita was a downtown coworker and she heard about my classes and started coming. Linda and Anita were my two faithful students for years. When you teach fitness classes the few faithful become your friends and allies.

They were there when I had my scare all those years ago. They knew when I would go in for my yearly mammogram because the stress of it made me work it out in class and they suffered for it. They knew that I had to have a biopsy done and was waiting for my results.

I will never forget that day. I was parked in front of the gym and Anita came over to help me unload the Zumba Steps for class. She asked: did you hear from the doctor? I said, ‘yep I have breast cancer’ She froze. Asked me if I needed to go home. No, I needed to work out. She quietly agreed and continued to help me unpack my gear. We walk into the gym and Linda asked the same question. Tears started forming in her eyes. I yelled and told her I haven’t cried so she is not allowed to cry. We did our step class and worked up a good sweat. Then we hugged and parted ways. I asked them to please keep it to themselves.

That is when Linda shared with Kathy. A trusted person that she knew she could talk to. Someone who knew me. Someone who would keep my secret. Someone who wanted to be helpful. Linda and Anita and Kathy would come and visit me. They brought dinner and flowers and gifts. We laughed and ate and just enjoyed each others company. I can’t think of three better people/friends/coworkers/workout groupies to have.

I decided to combine the three of them in this one blog. Mainly because both Linda and Anita refuse to have Facebook or social media.  I don’t know why I don’t have a picture of me and Linda since we actually see each other out side of work often. I know I don’t have one of Anita because she is out-of-town every weekend working on her house that her and hubby are building.  And this is the only one I found of Kathy and I.

For Christmas this year Kathy gave me a gift. She actually MADE the gift. It is a fancy wooden block with wires to place pictures in that simply says “so very blessed”

This is how I feel about Kathy. She makes me feel so very blessed. Her kind heart and smile  are sincere and meaningful.

This is how I feel about Linda and Anita. I love these three ladies. They have done so much for me not just this past year but for so many years prior to the cancer. Stable, thoughtful, reliable, fun, energetic, encouraging, kind, sharing, compassionate are just a few words to describe these three friends of mine.

Love is so very blessed.
